My very own cookie recipe. =)

Almond butter pecan cookies!
 
It was a day in which I was craving a yummy, warm cookie straight from the oven.

I couldn't find any recipes that appealed to me.. So I made my own! :)

These almond butter pecan cookies are light, fluffy and quite tasty if I might say so myself.


You will need:
  • A little bit less than 1 cup of almond butter
  • 1 egg
  • 1 tbsp of agave nectar 
  • 1/2 tsp of baking soda
  • 1/4 tsp salt
  • 1/2 tsp xanthan gum
  • As many (chopped) pecans as desired

 Directions: Combine all ingredients except pecans in a medium size bowl. Stir well. (I used a fork for stirring) Fold in pecans. Put the bowl of batter in the freezer for 15 mins. Once time is up, form into cookie shapes and arrange onto a greased cookie sheet and cook at 350 for 12-13 mins.

  3. EXCUSE ME MISS OLIVIA, BUT WHAT IS XANTHAM GUM AND WHERE CAN I GET IT ? IN ADDITION, I DON'T LIKE THE AGAVE NECTAR, WHAT CAN I SUBSTITUTE THE AGAVE NECTAR WITH ? I THANK YOU IN ADVANCE, HUGS.

    1. Xanthan gum is basically just something that holds the cookies together, since there is no flour in the cookies they would be crumbly. Therefore, the xanthan gum to hold it together.To buy it, try a Sprouts or a Whole Foods Market place. Those would be the most likely to have it. As for the agave substitute, you can try raw honey. Hope it turns out well! :)
