Todays lunch was SO good I just have to share it.
Basically, I used a GF pizza crust recipe without the pizza toppings.. Instead I used, hummus and avocado on one slice, and tuna fish on the other. :) For the crust recipe, I halved the measurements and it still made a good amount of crust for one pizza. :) So all in all, IT WAS DELISH!
Fun fact: Even my brother liked the crust. That's saying something because he never likes anything I make.

Big news and acorn squash!
Okay I have some "big" news here.... I went to a dietician today and got a meal plan and recommendations on what to eat. Apparently I need to gain 17 pounds... yeah, sorry but that's not gonna happen. In my opinion I am perfectly healthy in my weight but others beg to differ. Aside from that, I am on a diet which consists of foods that are high in protein, lots of carbs, veggies and meat. I have to eat a heck of a lot of food each day in order to fill out a certain log... It is quite overwhelming... Also, for the next 2 weeks I will be totally off of dairy products. Because my dietician seems to think that maybe one of the causes of my tummy troubles has something to do with dairy.. Which, now that my family and I have thought about it, could be VERY true. The bright side is, if the cause of some of this is the dairy and not the sugar, I can eat fruit again!! :) However, I would still stay off of sugar. So then this blog would be a gluten, sugar, and dairy free blog... Scary, huh? For anyone wondering, I am for sure gluten intolerant.
Moving on to the fun part of this post... FOOD. New thing today... ACORN SQUASH. All you will need for this recipe is an acorn squash and cinnamon. :)
DIRECTIONS: Preheat oven to 350. Cut the squash in half (I was told this part was very hard to do so be warned)and sprinkle with as much cinnamon as you wish. Fill a pan halfway with water, cover the squash in tinfoil and place into the pan. Bake for 35-45 minutes until the inside is soft.
On mine, I also added raw coconut flakes. I have to say this was very filling and rather tasty!

Biscuits and dessert!
Today I made biscuits by accident. Is it a good thing or bad thing?? Yeah, who knows. Either way they weren't half bad. So I guess I will share the recipe with you guys. :)
YOU WILL NEED:
DIRECTIONS: Preheat oven to 400. Mix all the dry ingredients first, and then add in the wet. Mix thoroughly. Roll dough into a ball and place in freezer for 10-15 minutes. While the dough is in the freezer, prepare a cookie cutting board by covering the board in GF flour (I used tapioca flour for rolling out the dough) and getting a drinking glass out for cutting the biscuit shapes. When the dough is ready to be rolled and cut, work quickly or else the dough gets VERY sticky. Once finished, place on a pizza pan or a cookie sheet and bake for 15 minutes. (And yes, I know, the dough is kinda smelly. Just bear with it.) You can top with butter, jelly, peanut butter, or even whipped cream!

I was at Kroger with my mum today, and we happened across some tofu. Me being the person who is looking at all kinds of recipes 24/7.. I knew that tons of recipes called for tofu and I really wanted to try some out. Fast forwarding to after dinner time... I made... wait for it... CHOCOLATE MOUSSE. From this blog that I absolutely adore. :) It was probably the sweetest desert I have had in a while! I loved it!
YOU WILL NEED:
- 1 and 1/2 cups of GF all purpose flour
- 1 tsp baking powder
- 1 tsp xanthan gum
- 1 tsp cinnamon
- 6 tbsp ( its the same as half of 3/4 cup) unsweetened apple sauce
- 1/2 an egg (scramble egg in a bowl and then use half)
- 6 tbsp your choice of milk (I use almond milk)
- 4 tbsp coconut oil

"Cookie dough"
I've been kinda busy lately so all I had time for today was a simple cookie dough recipe from this website.. I halved the recipe and it still made a good size amount. :)
I also omitted the chocolate chips and added a little bit of chopped pecans... Oh and I used a tablespoon of almond milk to make the mixture more "doughy." =) I must say these turned out quite fantastic.
And yes, I am going to make my own recipes soon, they just take time. Which I don't have a whole lot of these days.. I will find a day in which to make some new recipes though! Never fear! :)

Then after I ate 1 or 2 I got an idea... To cover the cookie dough bites in something yummy.. So I got out my "icing" recipe from the Baked Oatmeal post, (which you can find here) doubled it, covered half of the bites with it, and stuck them in the freezer!

Baked oatmeal
For my yummy breakfast today I had a recipe based off of this wonderful creation!
It was rather tasty! In the picture it is topped with my own "frosting" recipe. Directions as followed... Microwave 1 tbsp of cream cheese for 10 seconds, add 1/4 tsp vanilla extract, 1 tsp agave nectar, and stir! I put mine in the refrigerator while my oatmeal was cooking but that's just me. :)
As for my modifications to the oatmeal recipe... I used 1 tbsp and 1 tsp of raw honey instead of stevia, for the liquid I used almond milk, I added 1 tbsp of almond butter, and I used 1 tsp of cinnamon instead of half of a teaspoon... I really love cinnamon... haha. :)

My "homemade" pizza
Short post just to tell you guys what I had.. :)
My mum and I were at Sprouts getting some stuff... for later recipes.. *hint hint* ;) haha.
Then we came across a gluten free pizza crust which we just had to get. Because I haven't had a proper pizza in..like..4 months! It was called Rustic Pizza GF Crust. All I had to do was put my toppings and cook it! I used... pizza sauce, mini pepperoni, black olives, red bell pepper, and mozzarella cheese. I thought it was fantastic !

Donut wannabe
So today I made a "muffin" type thingy-ma-bob based on this recipe.
My opinion: It wasn't bad, but it wasn't my absolute favorite either. Maybe it was because I used a muffin tin instead... I dunno! It was still tasty enough that I ate 2! :)
But be warned... If you have a sweet tooth, odds are you won't like this recipe. I know this information because of my Mom, who after tasting my muffin proceeded to eat a Girl Scout cookie...lol. My sweet tooth is far gone so I don't have a problem!
I did however use a nice glaze/icing on the muffin that made it quite tasty. It consisted of: a little bit of mashed banana, 2 small spoonfuls of coconut oil, and a spurt of whipped cream, put in the microwave for 15 seconds and stir, stir, stir! :)

I tweaked it here and there. First off ,I used a muffin tin instead of a donut pan. Because, well, we don't own a donut pan.. I subbed the evaporated cane juice for 1 tbsp of agave nectar, added around a tbsp of cinnamon, and the recipe said to put them in for 12 minutes, however they were underdone when I took them out so I put them in for 5 more minutes.=) (Again, the cause of that problem could be because of my use of the muffin tin.)

Cinnamon dessert bread
This is one of my favorites so far.
It is very good.
It was surprisingly fluffy...like real bread.
But it isn't so it's not.
Okay onto the recipe...
YOU WILL NEED:
DIRECTIONS: Preheat oven to 425. In a medium mixing bowl, crack eggs and beat with a fork. Stir in the remainder of the ingredients. Once everything is a nice doughy texture, pour into a greased pie pan. (I used an 8in.) Bake in the oven for 15 minutes. When it's done, you can top with whipped cream, cinnamon, agave, or even fruit!
* I had a little bit less than the 1/3 more needed for the recipe (due to making pancakes the previous week) so I used 4 regular spoonfuls of brown rice flour.

- 2 eggs
- 1/2 cup of water
- 1/3 cup of coconut oil
- 1 and 1/3 cup Bisquick baking mix*
- 1/2 tsp cinnamon (If you have a sweet tooth feel free to add more!)
- 1 tsp raw honey
* I had a little bit less than the 1/3 more needed for the recipe (due to making pancakes the previous week) so I used 4 regular spoonfuls of brown rice flour.

I added chopped spinach and shredded cheese to mine though. I topped it with my favorite hot sauce, then put it onto an english muffin! (GF of course!)

My very own cookie recipe. =)
Almond butter pecan cookies! |
It was a day in which I was craving a yummy, warm cookie straight from the oven.
I couldn't find any recipes that appealed to me.. So I made my own! :)
These almond butter pecan cookies are light, fluffy and quite tasty if I might say so myself.
You will need:
- A little bit less than 1 cup of almond butter
- 1 egg
- 1 tbsp of agave nectar
- 1/2 tsp of baking soda
- 1/4 tsp salt
- 1/2 tsp xanthan gum
- As many (chopped) pecans as desired
Directions: Combine all ingredients except pecans in a medium size bowl. Stir well. (I used a fork for stirring) Fold in pecans. Put the bowl of batter in the freezer for 15 mins. Once time is up, form into cookie shapes and arrange onto a greased cookie sheet and cook at 350 for 12-13 mins.
